As the Executive Chef at Ernest’s Dining Room at NAIT, Rylan has over 15 years experience working in kitchens across the province and in Europe, Rylan has always had a love for cooking. Before he achieved his Red Seal in Culinary Arts, he completed his undergraduate degree with a major in psychology and anthropology. This allowed him to explore the cultural aspect of cuisine and how food is a centerpiece in gathering people and communities.

He enjoys working alongside Edmonton’s unique local food community, which allows him to highlight and support the inspiring, hardworking people that bring such diversity and passion to the region. He cares deeply about the food he makes and he’s passionate about passing his knowledge and interest onto others.

Stefan Cherwoniak

With his twenty one years of experience in the hospitality industry, Stefan has been involved in every facet the industry has to offer. His passion is designing innovative recipes combined with underpinnings of strong, traditional flavors.

Traveling through the European countryside, Stefan immersed himself in the culture of food. He was able to refine his palate and culinary techniques while sampling the local cuisine and wines. Stefan also completed a sommelier course in the vineyards of world-renown Laguiole, France.

Between travels, Stefan has worked in some of the finest restaurants in his hometown of Edmonton. He helped open some well-known local bistros, which assisted in establishing his reputation as a chef who creates well-balanced and healthy meals as well as having a back-to-basics cooking style with a gourmet flare. You’ll often taste hints of Europe and the rest of the world in Stefan's menus.

His impeccable palate and knack for food & wine pairings enable him to create a natural flow to the courses. The combination of simplicity and sophistication in his meals leaves a diner satisfied yet asking for when he is available next.
